Ebelskiver 
(Danish Pancakes)

After several months of using my ebelskiver pan to make other things, I decided to make ... actual Ebelskiver! (The recipe is from House of Nash Eats.)These are traditional Danish pancakes, which are round and puffy. They can be filled with something sweet, so I tried to fill them with strawberry jam, but it kept running out and burning onto the pan. Oops! (Pic #2 above shows some of this batch, with whole-milk yogurt.) After that, I didn't attempt to fill them, but instead served them with jam on the side. Either way was yummy, but not stuffing them was much easier. I'm glad I finally tried this!

Zucchini & Carrot Koftas

These were made in an ebelskiver pan rather than deep-fried. The recipe is from Just a Girl from Aamchi Mumbai. These weren't actually crisp, as I didn't quite manage to squeeze all the water out of the veggies. However, I liked the flavor, and didn't mind. It was a nice way to get one's veggies!

Khanfaroosh (Semolina Muffins)

These were made with semolina flour. The recipe is from Classic Vegetarian Cooking from the Middle East and North Africa, by Habeeb Salloum. He describes this as "a traditional dish in the Gulf region of the Arabian Peninsula," gives directions for making muffins from the batter, and notes that they are actually better when deep-fried. I decided to compromise, and make them in an æbelskiver pan. I knew each batch (of 4) was done when I could smell the rosewater. After I took the first bite, I decided that a few of these would be my dinner (with a little applesauce). And they were!
