Egg-Potato-Green Pepper Sandwich
This sandwich is made on homemade toasted bread, with a bit of pav bhaji masala for flavor. A filling and tasty lunch! If you don't have a lot of time or energy, and therefore decide to use frozen hash browns and frozen chopped peppers that cook together very quickly, I won't tell anyone.

Stuffed Vegetable Kulchas

with Aloo-Simla Mirch (Potato & Green Bell Pepper) filling
The above Kulchas were cooked on a griddle. They are from the same batch as yesterday's Kulchas, so you can check out yesterday's photo for more details, if you like. I'm posting this, as yesterday's photo was taken at night, right after cooking (in case I ate them all before I could take another picture). This one was taken during the day, so the lighting is better. Delicious at any time! The recipe for dough and method is from Archana's Kitchen.

Stuffed Vegetable Kulcha (Mixed Vegetable Stuffed Indian Flatbread)
This recipe is from Archana's Kitchen's recipe. As I had some leftover Aloo-Simla Mirch (Potato & Green Bell Pepper; see Feb. 6) in the freezer, I decided to use that as the stuffing. I liked the dough recipe, which was easy to make, to stuff, and to roll out. I also liked the kulcha cooking instructions, which were for a skillet on the stove (vs deep-frying); I used a griddle. I always like to have Indian breads (especially the stuffed ones) for a snack or light meal. They are so delicious and filling. Yay!

Simla Mirch-Aloo (Green Bell Pepper & Potato)
The vegetables are combined with a little oil, cumin seeds, turmeric, and salt. I learned this simple yet tasty dish from a friend long ago. She used to call it "Capsicum," and would make it whenever she wanted a quick and easy dish. She also added ground red chili pepper (which I have to avoid for the time being), but perhaps some sambhar powder might also be nice. I was inspired to make this the other day, from the 2 very large peppers I found at the store, as well as the last few small potatoes I had left. Mild or extra-spicy, it adds some delicious color to the day.

"Spanish Sauce" with Tomatoes & Green Peppers (another view)
Another view of a dish my Grandma called “Spanish Sauce,” that she often made. I don’t know that the recipe is actually from Spain, though.
It consists of some onions and olive oil, but is mostly tomatoes, green bell peppers, and tomato sauce. You can use canned tomatoes and sauce, and frozen peppers, if that’s easier. Grandma would have to make dinner for her family quickly after coming home from work, so she’d completely understand.
She served it over rice, and also with egg omelettes.
