Quick Chocolate Pudding

The recipe is from Bhavna's Kitchen. I really like this pudding recipe, as it's simple, and it really does only take about 10 minutes. Instead of the butter to be added at the end, I usually add honey to thicken it. This time, I also added coconut oil, as well as extra vanilla extract. After the pudding was cool, I wrapped up the coffee cups it was in, and put them in the freezer for . . . ice cream!

Chocolate Pudding Ice Cream

Throwback to this Chocolate Pudding Ice Cream. I guess it's really ice milk, strictly speaking, but as I can't eat cream, I'll take what I can get. It's ice cream-y enough for me, and nice to finish off the day with. 

Bhavna's Kitchen provided the pudding recipe, which I modified by using an equal amount of honey instead of butter. After the pudding cooled in the fridge, I just put it in the freezer. That seems to work better with chocolate pudding; still trying to perfect the technique for vanilla eggless pudding.

Chocolate Mahalabia (Creamy Chocolate Pudding)

This recipe is from SmileyGirl230's Feb 1st video on YouTube. In the photo, I sprinkled some ground hazelnuts and some mini-chocolate chips on the pudding, but it really needs no adornment. I made it early in the afternoon, and to give it time to chill, had to wait until after dinner to try it. At the first taste, I thought, "Oh my gosh, this is the best pudding I've ever had!" It's very thick and creamy, and smelled so chocolatey while it was cooling on the table, before I put it away in the fridge. Yummy!
