Sesame Udon Noodles,
 with Green Peas

This was based on the Spicy Peanut Seasame Noodles from Peas Love & Carrots. Although I made it a little differently than the recipe, based on what I had around and what I can have, I was so glad to be able to try it. I really like noodles, and these were great. 😄 (I hope it comforts her a little to know how much of a difference she makes in so many lives, with her enthusiasm, good cheer, and recipes. 🌼)

Chettinad Style Tomato Vermicelli 

This recipe was from Archana's Kitchen. This is like a Pulao, but made with seviyan instead of rice. Seviyan are vermicelli, but these noodles are very small and also broken into fairly small pieces. I used a vermicelli from a Middle Eastern grocery store, similar to the vermicelli from the Indian grocery store. The dish also included mustard and fennel seeds, fresh ginger, cilantro, turmeric, and a cinnamon stick. This result was colorful and yummy, as well as simple, and helped me use up some leftover canned tomatoes. So, win-win all around!

Ramen/Chuka Soba Noodles 
with Pizza Sauce

One time, a few weeks ago, I just wanted something simple for dinner. I really like these noodles, which are basically just plain ramen noodles (not fried, no flavor packet), and cook just as quickly (about 3 minutes). Once they were cooked, I mixed in some store-bought pizza sauce, and cooked it all together a little. This is the result. You can add your favorite veggies or proteins to make a meal.

South Indian Mango Chutney, 
with Noodles & Papadum

Here is Mango Chutney, served with store-bought Ramen (or Chuka Soba Noodles) and Papad(um) (crispy lentil wafer that can be deep-fried, but I heat in the microwave). The Mango Chutney was leftover, from the freezer. I didn't feel like making rice, and these noodles cook in only 3 minutes. (Basically, they're ramen noodles, not fried, and without the spice pack.) Nice, easy, and tasty.

These are plain noodles (not fried, no spice packet), with a very tasty sauce. I included the green peas to add some color, as well as to add some veggies. It was a simple meal, but very satisfying. Sometimes, you just want some noodles!

Sweet & Sour Soup


This is my version of a Sweet & Sour Soup. With noodles. And tofu. I was feeling a little under the weather today, so I decided soup was in order. With soup, as with nothing else, I tend to go without a recipe, and to experiment. 


This soup was made of water, salt, a little corn oil, onion powder, ground ginger, dried basil, ground cashews, brown sugar, low-sodium soy sauce, frozen peas-&-carrots, five-spice powder, and leftover oven-fried tofu. Lastly, the noodles: chuka soba noodles, which are basically unflavored ramen-like noodles that cook quickly. I was pleasantly surprised at how well the soup turned out!
