Noodles Dosa
(South Indian Savory Crepes, 
with Spicy Noodles)


This was based on a recipe from Magic of Indian Rasoi. The recipe calls for dosai (savory South Indian crepes) filled with Chinese-style noodles.

The dosa batter is considered "instant" although it must rest for 15 minutes, because this is still much quicker to prepare than the traditional dosa batter. These dosai were delicious by themselves, and they were even a bit crispy with just a small amount of oil.

One reason I was so eager to make this, was because I already had leftover Thai Massaman Noodles. I used these (instead of the noodles in the recipe) to fill the dosai this time. These were chuka soba aka ramen noodles, which cook in 3 minutes. I cooked them with some chopped veggies (green peppers, onions, celery, and carrots), as well as leftover Thai Massaman Curry paste, soy sauce, and a little brown sugar. Hopefully next time, I can make this Noodles Dosa with the noodles from the recipe.

Ramen/Chuka Soba Noodles 
with Pizza Sauce

One time, a few weeks ago, I just wanted something simple for dinner. I really like these noodles, which are basically just plain ramen noodles (not fried, no flavor packet), and cook just as quickly (about 3 minutes). Once they were cooked, I mixed in some store-bought pizza sauce, and cooked it all together a little. This is the result. You can add your favorite veggies or proteins to make a meal.

South Indian Mango Chutney, 
with Noodles & Papadum

Here is Mango Chutney, served with store-bought Ramen (or Chuka Soba Noodles) and Papad(um) (crispy lentil wafer that can be deep-fried, but I heat in the microwave). The Mango Chutney was leftover, from the freezer. I didn't feel like making rice, and these noodles cook in only 3 minutes. (Basically, they're ramen noodles, not fried, and without the spice pack.) Nice, easy, and tasty.

Ramen/Chuka Soba Noodles, 
with General Tso's Sauce and Green Peas

These are plain noodles (not fried, no spice packet), with a very tasty sauce. I included the green peas to add some color, as well as to add some veggies. It was a simple meal, but very satisfying. Sometimes, you just want some noodles!

Sweet & Sour Soup


This is my version of a Sweet & Sour Soup. With noodles. And tofu. I was feeling a little under the weather today, so I decided soup was in order. With soup, as with nothing else, I tend to go without a recipe, and to experiment. 


This soup was made of water, salt, a little corn oil, onion powder, ground ginger, dried basil, ground cashews, brown sugar, low-sodium soy sauce, frozen peas-&-carrots, five-spice powder, and leftover oven-fried tofu. Lastly, the noodles: chuka soba noodles, which are basically unflavored ramen-like noodles that cook quickly. I was pleasantly surprised at how well the soup turned out!

Homemade Vegetable Noodle Soup


The noodles are chuka soba, which seem to me like plain ramen without the flavor packet, as they cook in 3 minutes. The vegetables are frozen "spring blend" vegetable mix: zucchini, yellow squash, carrots, cauliflower, and broccoli. The soup also contains a little olive oil and some seasonings: salt, dried Italian herbs blend, dried basil, and ground versions of cumin, coriander, and ginger. Not too spicy. I also added a couple of teaspoons of ground cashews for protein, which just blend in to the soup.

I have to thoroughly cook all veggies, and I've found that a good way to do that and still make sure the veggies taste good, is to make a soup of them!
