Veggie Arayis, or,
Egg Pita/Baida Roti
This is a half-pita, cut across the diameter, stuffed with leftover Aval/Poha Upma, dipped in beaten egg, and pan-fried. (For more info on the Aval/Poha Upma, or Indian Pounded-rice Pilaf with Veggies, please see my recent post.) This was very quick to make, and very tasty.
My inspiration was from: 1) Middle Eastern Arayis recipes, of pita bread stuffed with a ground meat mixture, and then grilled; and 2) the Egg Parathas of @theGutlessFoodie on Instagram. Once I realized I had pita bread and a stuffing, I just knew I had to try it!

Egg Bread
This is based on the Egg Parathas of @thegutlessfoodie on Instagram. After adding a little oil to a pan, I poured in a beaten egg. Instead of a Paratha (Indian flatbread), I used what I had: a slice of Italian bread, which I placed in the egg. I melted a little coconut oil on the other side of the bread. When the egg was done, I turned the whole thing over, to brown the second side of the bread. It was very good.
This was inspired by the Egg Parathas of Natasha, known on Instagram as @thegutlessfoodie. I started out with a little oil, and some cumin seeds and chopped carrot/onion/celery. Next, I added in a beaten egg, mixed with some salt, turmeric, and pav bhaji masala. I turned over a pita and added it to the pan upside-down, and pressed it in. I melted a little coconut oil on the side of the pita facing up. When the egg was done enough for me, I turned over the whole thing, and pressed the underside of the pita into the pan. The coconut oil made it somewhat brown and crispy. Very tasty! The one I made a couple of days later looked even better, but I cut it up and ate it before I could take a picture.

Baida Roti (Egg Paratha)-style Pizza
I had 2 slices left of the Pizza with Fresh Tomato Slices (No Sauce) (Feb. 10 photo), and wanted to eat it with some egg, for protein. (Normally, I might make a cheese-less pizza, and then add a little cheese when I reheat it in the toaster oven.) I remembered the scrumptious-looking Egg Parathas that @thegutlessfoodie on Instagram makes for breakfast sometimes, and thought that was ideal.
So, I scrambled an egg well, in a bowl, and then poured it into a frying pan heated with a little olive oil. I then placed the pieces of pizza, upside-down, in the egg, until that side of the egg was done. I may also have turned it over after that; not quite sure. I cut the egg into 3 about-equal portions (one each with its pizza, and the last one, I ate with a slice of the other pizza I'd made (Feb. 2nd photo)). Wow, I really like that method! Wonder what else it works with? Hopefully, I'll be able to try it some time with actual parathas!
