Instant Pot Saag Aloo 
(Indian Kale & Potatoes)

Made with frozen chopped kale, and potatoes, this is from the recipe of Vegan Richa. I think next time, I'd first quickly defrost the kale in the microwave before cooking. I'd also add a bit more salt and spices, as I just added in most of a bag of kale (without measuring), and I tend to toss in extra potatoes when I take the time to cut one or two ... thereby diluting the power of those seasonings. These comments reflect on me, of course, and not on the recipe, which was fabulous. As it's better for me when things are well-cooked, I just let the pressure naturally release after the cooking time was up. Anyway, I was really wanting kale and potatoes, and this recipe was the perfect vehicle for that.

(South Indian Savory Dumplings)

Here they are featured with some coconut oil and sprinkled with chutney powder (idli podi). These were from the recipe of Nisha Madhulika. I steamed them in an Instant Pot (not sponsored), using a very special idli rack. (You can get a glimpse of the idli rack, in the back left of the pic.) Yesterday was #worldidliday !

These idlis are considered "instant" although the batter must rest for 20 minutes, as that is still much quicker than the traditional version. The rava/sooji is basically cream of wheat/farina, and is mixed with yogurt. A little baking soda is added just before steaming, to further lighten the idlis.

These were very tasty just eaten plain, and even better as pictured here. I've been eating them for breakfast that way. Yummy!

(South Indian Savory 
Steamed Dumplings)

These were made from rava/sooji/farina (like Cream of Wheat), and steamed in an Instant Pot (not sponsored).

The idli batter is from the Rava Idli recipe of Nisha Madhulika , and is an "instant idli" (no long fermentation required, just a short wait of 20-30 minutes). I used the cooking instructions for the Unicorn Idli of Instapottin' with Poonam. The idli rack was a gift from my sister-in-law, and I was waiting to use it.

I enjoyed the first few Idlis with chutney powder, coconut oil, and whole-milk yogurt. What shall I make with the rest of my new stash of Idlis? Hmmm...

Rava Idli (Savory Steamed Dumplings)

These steamed dumplings from South India are from the recipe of Nisha Madhulika on YouTube, and made from rava/sooji/farina/like Cream of Wheat. I steamed them in an Instant Pot (not sponsored 😉), basing it on Instapottin with Poonam's instructions for Dhokla. These Rava Idli were simple but tasty. I used an egg poacher, but now that I know the method that works, I should get an idli steamer!

Carrots

These were steamed in the Instant Pot for about 4 minutes. I waited after that about 10 minutes, before releasing the rest of the pressure and opening it. This was almost a pound of carrots (minus the one that looked bad). I also like to roast carrots in the oven ... but then, they always get a little overdone in spots, in order for them to be cooked enough. I don't mind, but thought I would try steaming for a a change. It worked well, and the carrots were done enough for me. (I can't eat veggies unless they're very well-cooked. I often just boil them in water, as soup, for that very reason.) Now, how shall I eat them? ... The other day, I mashed some with Paneer (Indian cheese) and salt, and used it in a sandwich.

(Potatoes with Cumin Seeds)

I made this using the leftover cooked potatoes featured in the last post. The simple yet yummy recipe is from Suvir Saran in Indian Home Cooking. After I made the potatoes in my new Instant Pot, I kept thinking of that recipe, so I had to make it. I basically stir-fried the potatoes in oil and cumin seeds, until they were browned, and then added some salt. That's all! It went well with some toast, leftover dal (Indian legumes), and whole-milk yogurt.

Potatoes

The humble potato was the first thing I made in my new Instant Pot. The experience went well, once I realized that the steam coming out meant I'd forgotten to attach the sealing ring! Once everything was put together properly, all was well. (Now you see why I've always been nervous about using pressure cookers!) The potatoes, once done, were melting soft, just as they were; I had some as an early-afternoon snack. Yummy! Now I can have it as mashed potatoes, or stir-fried with spices, or ... and it will cook quickly if used as an ingredient in another dish. I also kept the water that it was cooked in, for soup. Yay!
